FOODPORN - 56 - Tom Yum Gung Pasta

Hello everyone. It has been a while since I write something down here. Well, I have been quite busy with things on hand. However! Do not worry! I still maintain my cooking and trying out some new things once in a while! I still have a stockpile of foodies to post here. Just keep it post! 

So, today's menu is my original dish. This is not my first fusion dish between pasta and Thai, but I think that this one came out to be the most delicious of all. You might have seen similar stuffs elsewhere, but what I have right here is my original recipe.

でも!たくさんアップしていない料理が山ほどありますので、ぜひぜひ見てくださいね!

今回は私初めて作って今まで一番美味しいフュージョン料理です!食材は本当にカルディーKALDIで買えるので、安心してください!(ライム葉も最近カルディーに輸入されてるみたいです!)

Tom Yum Gung Pasta!!!!!

Main ingredients:
Shrimp
Pasta
Tom Yum Gung paste (you can use any brand you want to)
Button Mushroom
Milk
Chili 
Lime leaves 
Nam Prik Pao (sweet shrimp paste)
Sugar 
Fish sauce
Lemon 

Here is the look of all the ingredients I use. In the picture is Black Tiger Shrimp

Chopping up all the ingredients and ready to rock'n roll! 

The basic steps for the pasta base are as follow. 
      1.  Heat up the pan and saute the Tomyumgung paste first
      2. Add milk around 60ml of it. Try add little by little. Just let it soak over your pan. You can still continue to add in some more later
        1. At this point you can start to boil your pasta noodle
      3. Add mushroom, lime leaves, and chili
      4. Cook the mushroom for a few minutes
      5. Add shrimp
      6. Add sweet shrimp paste (nam prik pao)
      7. Spice your soup with Sugar, fish sauce and lemon. 
        1. The careful point here is that the spiciness and sourness of this dish is depending on how much you add lemon. Just choose the sourness level that you like by tasting the soup little by little. 
        2. Try to use low heat at this point because you might burn through the soup too quick
      8. Stir the soup in medium heat and let it simmer a little bit.


Add pasta then BAAAAMMM!!!

FOODPORN - 55 - Kao Tom with Porkribs

This dish is perfect for person who like to manipulate their own taste of the soup and fit quite well for fall/winter season. The core of this dish is the soup. Very very very flexible depending on veggies in your region. What I will be presenting you today is the one I can find in Japan with Japanese vegetables. 

今日のメニューは自分の味にしたい方のほうに迎えます。基本はスープ系なので、味付けは自分たちができるようになってます。
この料理は食材特に決まりがないです。その季節による、野菜が変えられます。本日は秋野菜をご紹介します。

Main Ingredients: *ingredients with stars are most preferable*
Soup:
Chicken stocks (or just water)
Pork ribs *****
(basically pork with bone. The bone will keep the soup sweet. I prefer parts with soft bones because you will be able to eat them as well.)
Radish *****
Garlic 2-3 cloves 
Coriander:s roots **** (or use celery for substitute)

Optional:
Mushroom (japanese shiitake in this case)
Onions
Carrot 
Potato
Broccoli 

For Combination part:
White rice (preferable not too soft) ***
Fried garlic (golden brown) ***
Chopped small green onion ***
3 mins boiled eggs 
Leaves of celery 
Fish sauce
Sugar
Lemon or vinegar 
Chili powder 
Pepper

Alright, the menu looks like it has so many ingredients but really, those are very easy to find in your local supermarket. 

First boil the soup and add in ribs, radish, and other veggies
add in little of fish sauce 


We will let this pot set until radish is soft enough (you can see that the color of radish will turn from hard white to transparent)

Start cooking the subsidiaries ingredients aka. fried the garlic or chopped green onions. Make a good use of your waiting time. You can also start cooking the rice !! 



After the radish looks soft enough (by this time the meat should be fairly soft too),
prepare the rice. 



To me, I love to put basic topping and seasoning first on top of the rice such as sugar, fish sauce, chili powder and egg. Then you can add in the soup until get a bit over the rice. 
Topped that with green onions and fried garlic, some black or white pepper would be nice as well. If you do not like spicy, you can just skip the chili part. The basic taste that this dish should taste like is salty, sweets, and sour. Therefore, add in some lemon or vinegar. The powerful taste should be created within the soup. Feel free to add as much as you want if you want the soup to taste either way, or! keep it traditional and do not add any of the flavoring seasoning is also acceptable !!!! 




Trust me! They taste awesome!!!!!!!!!







FOODPORN - 54 - Spare Rib!

HELLO!!!!!!!!!!!!!!! Sorry that I have been out for around 1 year. I have moved to different work space and finally settled down. Cooking? Yes, I have been cooking a lot of course! Took quite a few photos as well!!!! Just that I do not have time to post things on here. So, I will be posting what I have been cooking for this past year. Will take a while but should be fine. Here is what I made today. Spare rib!
For Spare Rib my style, a little spicy!

日本にいる皆様!お久しぶりです! 私は去年から忙しくて、アップする時間がなさすぎですね。。。でも!何とかなって、アップデート時間が増えたのでこれから1時年ぶりの写真や料理したものを書いて入れておきます!なので、よろしくお願いいたします!!!!!!!!!!!


Ingredients are:
Dry Rub:
Brown sugar
Salt
Pepper
Garlic Powder
Cayon Powder (Major spice)
Smoked Paprika Powder

BBQ Rub:
BBQ Sauce
Ketchup 
Honey
Little Salt 

So! 
The easy steps are !!



Firstly, mixed all the dry rub together then!


Rub them all!!!!


 Pre-heated oven to 120c and baked this for 2 hours



After that, rub the bbq rub on it and baked at 260c for 15 mins



This is just for butter potato



This! This is the result!!!!!! Its so good!!!!! 





You can try to use something else to go with it as well. It is not always together with potato. 

FOODPORN - 53 - Roasted BBQ Chicken

This time, I had quite a few of chicken legs and I was wondering what to do with them. I am with my parents this time and because we are too bored of just boiled the legs, so I created this bbq chicken out!

Ingredients:

Chicken legs
BBQ sauce
little Ketchup 
Thailand Sweet chili sauce (optional) 
Salt

So, firstly,

Preheat your oven at 175c 

Slap.. Yes, Slap your chicken legs a bit.
Then you apply salts around the legs. My chicken legs is a pretty big one.

Heat your fry pan at strong heat and only fry your chicken leg on the skin side only! Keep checking the side until you think that it looks light brown enough. This will gives the crispiness of the skin.

Mix all the other ingredients together and then taste it. If it is the taste that you like, then go ahead and use it! 


Apply on  both side of the legs.


then put it in the oven for 15 mins. After that, take it off the oven and apply the bbq sauce again. 


Then let it sit in the oven for another 30-35 mins. 

COMPLETE!!!!
  


I add some Basil powder on top just for the love of smell and some lemon to add the different taste into it.

FOODPORN - 52 - Roast Beef Version Up

This time I decided to create my own spices out of everything I own in my house. 
The beef block I bought last time was so much that I can make so many things out of it.

For today's dish, I utilized my knowledge from many meals that I used oven. 

Also! I made my own style of gravy sauce too! 

Now! Hope you like it!!!!

Ingredients: 
Beef block
Olive oil
Freshly ground black pepper
Salt
Thyme
Basil
Oregano

Sauce:
Red wine
Beef stock


Firstly prepare the meat that you want to make 


Mix in Olive oil, basil, thyme, oregano, and black pepper together throughly


Apply them at every side of the meat. and add in Salt on top of it. Make sure that the spices stick to the meat. Then let the meat sit in for around 30-1 hour
After that, preheat the oven at 200c.
Roast it for 45-50 mins at 200c and another 20 mins at 150c 

After you take the meat out of the oven, use the foil paper to warp around the meat and let it sit for 15-20 mins. 


While we are waiting to let this meat sit, we can start with the sauce. 
You will find many left over ingredients on your baked pan (the one that you used to roast)
I used this the fry them on the frying pan, and add in red wine and beef stock. If you do not want red wine, just add more stock. mix them together until the sauce looks great, you may add pinch of salt if you want. 

Finish!!!!!




This meal is absolutely wonderful!!!!

FOODPORN - 51 - Roast Beef The Simple

This is my first time making this out and I do not regret making it!!!!

Simple is the best! 

This is the Roast beef for you!!!

Ingredients:

Beef block 
Garlic
Freshly ground black pepper
Salt
Thyme
Red wine


Here is the meat I prepare.


Cut the top of the meat like the picture , should not be too deep into the meat. Then add chopped garlic into the space, sprinkle all side with salt, black pepper, and thyme. Make sure to rub your meat while you are adding spices because it will make those spice stick on your meat. Do not worry that your hand will get dirty!!!


Add red wine to cover the meat before putting it in the oven. Pre-heat the oven at 200c first before putting it in. Let it sit in the oven at 200c for 45 mins then lower it down to 145c for another 20 mins


You should get this pink-ish medium rare roast beef!!! 



Now you do not have to go to those fancy restaurant anymore when you can actually make it at home!!!
